no knead chewy bagels

ingredients
For 6 (plain) bagels, you will need:
⊹ 2 cups (300g) all-purpose flour
⊹ 1 tsp (3g) any type of yeast
⊹ 1 tbsp (14g) white sugar
⊹ 1 tsp (6g) salt
⊹ 4 and 1/3 cups water for the dough and the water bath
⊹ topping ideas - sesame seeds, poppy seads, cinnamon, etc
⊹ (optional) tiny of whisked egg for glowing yellow look
For more chewy texture, you can substitute 1 cup all-purpose flour with 1 cup bread flour
instructions
1. Put yeast and sugar into 170ml of lukewarm water, then stir them up. Leave the mixture for 5 minutes.
If the water is too hot, it might deactivate the yeast and too cold, the yeast will not be activate.
2. In a separate bowl, mix 2 cup of all-purpose flour (or bread flour) with salt.
3. After 5 min, pour the yeast mixture into the flour mixture.
4. Mix them up. The batter will be a bit sticky at first but trust the process!
5. When the dough is moistened and starting to easier to manage, shape it into a ball.
6. Cover it with plastic wrap and let it rest for 30 minutes.
7. After 30 mins, uncover the wrap and start our folding technique. You just need to gently punch down the dough and fold edges over towards the dough. Keep doing this for 3-5 minutes.
8. Reshape it to a ball then leave it covered and rest for 30-60 minutes.
9. After the second rise, take the dough out of the bowl and put it on a dry surface.
10. Gently press the dough out a little bit and start dividing it into 6 pieces.
11. Shape each dough pieces into a ball.
12. Cover and let them rest for 20 minutes.
13. After 20 minutes, shape it into a bagel. There are different ways to do it. The easiest way for me is to make a hole in the middle of dough with my index finger and then start shaping to the desired size.
14. Preheat the oven to 430F /22O C.
15. While waiting for the oven, prepare the water bath by bringing 4 cups of water to boil.
15. When the water starting to have bubbles, boil the bagel 30 seconds on each side. Depends on how big your pots, you can boil multiple at a time.
16. After boiling, whisk up the egg and use the brush or the back of the spoon to spread the egg wash. This step is optional, especially in this economy (iykyk)
17. You can also add your desired toppings.
18. Place the bagels a few inch/cm apart on the baking tray lined with parchment paper or aluminum foil.
19. Bake for 17-23 minutes until golden brown and ENJOY ⋆ ˚。⋆୨୧˚
